Tips and variations
For optimal pancake success, we suggest you squeeze the courgettes well grate, using a clean cotton cloth, to remove all the vegetation water.
If you like, to make them even tastier, you can replace the grated parmesan with pecorino or caciocavallo, you can stuff them or you can add a mix of spices and aromatic herbs to the mixture, such as mint leaves, turmeric, curry, parsley, coriander.
