Once cooked, it is dusted with icing sugar and is traditionally accompanied with cranberry jam or stewed plums.
The name literally means “emperor’s omelette”: according to legend, Franz Josephemperor of Austria, one evening asked his cook to prepare one for him crepe: he, by mistake, cooked it too much and ended up breaking it. Since he couldn’t make it again, he cut it into squares and sprinkled it with icing sugar, so as to disguise the mistake. The soft, golden morsels pleased the sovereign so much that they soon became his favorite dessert.
